Almond Biscotti
Recipe 6 Tablespoons butter 2/3 cup sugar 2 eggs 1 teaspoon vanilla extract 1 teaspoon almond extract 2 cups flour 1/2 teaspoon salt 1 1/2 teaspoon baking powder 1 cup almonds 1. Preheat oven to 325 degrees. Line baking sheet with parchment paper. 2. Whisk flour, baking powder, salt. Set aside. 3. In stand mixer, beat butter until creamy. Add sugar, almond extract and vanilla extract, beat 2 minutes. Add eggs, one at a time, beating until well combined. 4. Add flour mixture until well combined. Then add almonds. Beat on low. 5. Divide in two even portions. Shape into logs, 1 inch thick, 2.5 inches wide. 6. Bake 30 minutes. Allow cool 5 minutes, cut into 3/4 inch slices. 7. Return to oven. Bake 10 minutes, flip, bake 10 minutes. 8. Cool completely on wire racks.
