Breakfast Egg Casserole
Recipe 6 to 8 slices of white bread, torn or cut into small pieces 8 to 10 eggs, beaten 1 lb sausage 1 cup ham 1 medium onion, diced 1 red or green pepper, diced 1 cup milk or cream 1 teaspoon Penzey's BBQ 3000 spice 2 cups loosely torn spinach Salt and Pepper to taste 1. In a 9 x 13 casserole dish, place bread. Set aside. 2. In a medium skillet, cook sausage for 5 minutes on each side. Break up sausage. Add ham, onion, pepper and some spices to taste. Cook until sausage is no longer pink and vegetables are tender. 3. Place meat mixture over bread in casserole. 4. Combine eggs, milk and spices to taste. Pour egg mixture into casserole dish over meat mixture and bread. 5. Cover and allow to sit in refrigerator over night. 6. Preheat oven to 350. Cook casserole for 35-45 minutes.
