Corn Soup Recipe

Håfa adai, everyone! Today's recipe is super simple, and perfect for this cold, rainy weather we've been facing lately (watch it be sunny as hell when I upload this). Corn soup is a delicious, warm, comfort food that many people hold near and dear. There are a number of ways to make it, and this is just how I make mine. INGREDIENTS • 5 cups kernel corn (I used frozen) • 2lbs boneless skinless chicken thighs • Onions • Garlic • Salt • Pepper • Magic Sarap (or garlic & onion powder) • 1/4 cup corn starch • 1 can coconut milk • Water • Optional chicken bouillon • Green onions for garnish DIRECTIONS 1. Chop onions & mince garlic. 2. Slice chicken thighs into bite sized pieces. 3. Mix corn starch and cold water to form a slurry for thickening the soup. Set aside. 4. Bring pot to medium heat and saute onions and garlic until fragrant. 5. Add in chicken and season. 6. When almost completely cooked add in corn, coconut milk, and bouillon if desired. Use coconut milk can to measure add 2-3 cans of water. Cover and bring back to temp. 7. When about to reach a boil mix in the slurry and stir until soup thickens as desired. Taste is seasoning needs to be adjusted. 8. Serve hot and garnish with green onions.
