Making Belizean Jam Rolls
Jam Roll Recipe by Belizeanvibez 4 Cups Flour 1/2 Cup Flour (to adjust dough texture & flour board for rolling 3 Tbs Sugar 2 Tsp Salt 2 Tsp Baking Powder 1 Cup Shortening (chilled) 1/2 Cup or (8oz) Butter (chilled) 1 Jar Guava Jam 1 1/4 - 1 1/12 Cups iced cold water 1 egg and 4 oz milk (brush dough before baking) Mix flour, sugar, salt and baking powder Add shortening and butter and cut dough into flour to form a crumb like texture using two forks for pastry cutter Slowly add iced cold water to the flour mixture, fold using a fork until dough is formed Cut dough in two pieces and wrap in saran wrap and refrigerate for approximately 15 minutes Flour board or counter and flatten dough using roller pin cut excess dough to form a rectangle shape Spread guava jam/jelly or jam of your choice to flatten dough Damp edges of dough with water or milk before folding to make jam roll Seal edges of dough using a fork Bake on a baking sheet on 375 degrees for 25 to 30 minutes Enjoy!
