This muffins is easy to make. Low carb, low sugar, high protein, low fat recipe makes healthy snack at any time. Ingredients; 1. 1 cup oat flour 2. 2 small eggs (or 2 egg whites) 3. 2/3 cup almond milk (or oat milk or any nut milk of your choice) 4. 2 1/2 scoops (75 g) vanilla whey protein powder 5. 1 tablespoon almond meal 6. 1/4 cup unsweetened apple sauce 7. 1 teaspoon vanilla extract 8. 1 teaspoon baking powder 9. 2 tablespoons sweetener (like erythritol) 10. 1 teaspoon cinnamon Method: 1. Preheat oven to 190C (375F). Line muffin tray with muffin cases and spray with non-stick cooking spray. 2. Mix all ingredients in a bowl (except cinnamon) with a whisk. If mixture is too thick add a little more milk. 3. Pour half of the batter in muffins cases, sprinkle with cinnamon and pour rest of the batter, swirl around to slightly combine cinnamon. Bake for 20-25 minutes. Cool on wire rack. Makes about 10 medium size muffins.
