Lapsi (Sweet Dalia) Recipe — Without Pressure Cooker A traditional Indian dessert made with broken wheat, jaggery, ghee, and dry fruits — often prepared during festivals like Holi, Diwali, Ashtami, and Navami during Navratri. Ingredients 1 cup dalia (broken wheat) 150 g jaggery ½ cup desi ghee 8–9 almonds, chopped 8–9 cashew nuts 4–5 pistachios A handful of raisins 1 tsp cardamom powder 1½ tsp poppy seed powder (or whole poppy seeds) 3 cups water 1 cup water for jaggery syrup (chashni) Method Roast the dry fruits Heat 1–2 tbsp ghee in a heavy pan. Roast almonds, cashews, pistachios, and raisins until lightly golden. Remove and keep aside. Roast the dalia In the same pan, add the remaining ghee. Add broken wheat and roast on low-medium heat until aromatic and golden brown. Cook the dalia Carefully add 3 cups water. Stir well and cook covered on low heat until the dalia becomes soft and absorbs most of the water. Prepare jaggery syrup In another pan, heat 1 cup water. Add jaggery and stir until fully melted. Strain if needed to remove impurities. Combine Pour the jaggery syrup into the cooked dalia. Mix continuously for a few minutes on low flame. Finish Add cardamom powder, poppy seed powder, and roasted dry fruits. Cook for 2–3 more minutes until rich and glossy.
