🥘 Achari Baingan Recipe 🧾 Ingredients * 1 large eggplant (baingan), chopped into small pieces * 1–2 tsp salt (for soaking) * Warm water (for soaking) 🌶️ Spice Mix * Salt – to taste * 1 tsp coriander powder * 1 tsp turmeric powder * ½ tsp red chili powder * 1 tsp amchur (dry mango powder) * 1 tsp cumin seeds 🧅 Vegetables & Aromatics * 1 onion, chopped * 2 tomatoes, chopped * 1 tbsp ginger + garlic + green chili (finely chopped) 🧂 Achari Masala (Pickling Spice Blend) * 1 tsp cumin seeds * 1 tsp kalonji (nigella seeds) * 1 tsp fennel seeds * 1 tsp mustard seeds * 1 tsp fenugreek seeds 🥣 Other Ingredients * 2 tsp curd (yogurt) * 1 tsp kasuri methi (dried fenugreek leaves) * 1 tbsp oil * ½ cup fresh coriander leaves (chopped) * 1 tsp mango masala (optional, for extra tang) ⸻ 👩🍳 Instructions 1. Prep the Eggplant * Add chopped eggplant to warm salted water. * Soak for about 20 minutes (removes bitterness). * Drain and pat dry. 2. Fry the Eggplant * Heat oil in a pan. * Add eggplant pieces and sauté until lightly browned and soft. * Remove and set aside. 3. Make Achari Base * In the same pan, add a little more oil if needed. * Add all achari masala spices (cumin, kalonji, fennel, mustard, fenugreek). * Let them crackle. 4. Cook the Masala * Add chopped onions → sauté until golden. * Add ginger-garlic-green chili → cook for 1–2 minutes. * Add tomatoes → cook until soft and oil separates. 5. Add Spices * Mix in: * turmeric * coriander powder * red chili powder * salt * amchur * Cook for a minute. 6. Combine Everything * Add fried eggplant back into the pan. * Mix well so spices coat evenly. 7. Finish the Dish * Lower heat and add curd (yogurt), stir gently. * Add kasuri methi and mango masala. * Cook for 2–3 minutes. 8.
