Poha Aloo Paratha Ingredients 3 potatoes, boiled and mashed 1½ cups Poha, washed and soaked for a few minutes 1 green chilli, finely chopped 1 small piece ginger (about ½ inch), grated ½ tsp salt (adjust to taste) ½ tsp red chilli powder ½ tsp cumin powder ½ tsp coriander powder ½ tsp chilli flakes ½ cup fresh coriander leaves, chopped Desi ghee as needed for cooking parathas Whole wheat dough for parathas Method Squeeze excess water from the soaked poha and place it in a mixing bowl. Add mashed potatoes, green chilli, ginger, salt, red chilli powder, cumin powder, coriander powder, chilli flakes, and fresh coriander leaves. Mix everything well to make a soft stuffing. Divide the dough and stuffing into equal portions. Roll a small dough ball, place stuffing in the center, seal the edges, and gently roll into a paratha. Heat a tawa/griddle and cook the paratha on both sides using desi ghee until golden brown and crisp. Serve hot with curd, raita, chutney, pickle, and butter.
