Small Batch Cornbread for Two
Tender, buttery and delicious, this cornbread comes together in minutes and it's the perfect amount for 2-4 people. Cornbread Recipe: 1/4 cup butter plus 1/2 Tbsp, melted and divided 6 Tbsp cornmeal 6 Tbsp all purpose flour 3/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 2 Tbsp sugar 1/2 cup buttermilk 1 egg Preheat oven to 425 degrees F. Melt butter in bowl. Add in cornmeal, flour, baking powder, baking soda, sugar, salt and mix to combine. Add in egg and buttermilk and stir until just combined. Put 1/2 Tbsp of butter into a 9 x 5 inch baking dish or skillet and place in oven to allow butter to melt. Remove from oven as soon as butter is melted. Pour batter into hot pan and bake for 15-20 minutes or until a toothpick comes out clean and cornbread is golden brown on top. Serve with butter and honey. .
